Never considered a frivolous wine this cap classique has gained in notoriety - definitely“something to talk about” - always useful in getting a party going - many will love it, some will be unsure, everyone will be intrigued.
All typical shiraz nose full of pepper and spice with rounded hint of sweetness from lovely raspberry fruit with sugar matching the tannins perfectly - a dangerously easy wine to drink too much of .
“Quite a French herbaciousness in this one.” “Lovely fine mousse” shows the wine’s class. Drink icy, icy cold!fine mousse, fruity freshness, "naughty but nice"
Winemaker Comments
Nitida is now the only producer of a red cap classique in South Africa and we are struggling to fulfill the market expectation. What initially took a full 18 months to sell, is today selling in less than 3 months. This has caught us a bit by surprise and we are planning to slowly start lifting the production to fulfill this excitement in the market. making a red cap classique is a high risk venture. as for any other red wine the grapes are harvested, crushed, de-stemmed and then fermented in open vat fermenters. Then it goes into barrels for 9 months, unprotected by sulphur which would inhibit the next step - secondary fermentation, (initiated by lifting sugars and adding yeast). after a further 10 months on the lees it is finally degorged and corked. the wine has to be in perfect health throughout the nearly 2 year process.
